Starting the reciple blog with something which is so very Bengali yet very new to the palette.

Summer brings raw jackfruit or 'echor' or ' gachpatha' to each and every Bengali household and this recipe is dedicated to that.

So bringing you Echorer Malai Kofta from my mother's recipe book.


For kofta - 

·     To make the koftas mix all the ingredients and knead everything till they are well mixed together.

·     Now make ball sized koftas and fry them in shallow oil and the koftas are ready.

Gravy - 

·     To make the malai Gravy Heat ghee in a pan and add the whole garam masala and let it temper the oil.

·     Add the chopped onion and fry till golden.

·     Add the garlic paste and cook for a minute before adding the ginger and green chilli paste.

·     Add in the powdered spices i.e coriander powder, cumin powder and.

·     Add cashew nut & poppy seed paste and cook till the oil separates.

·     Add water& let it boil.

·     Add cream and mix well.

·     After that let it simmer for a little while till you get the desired consistency of the gravy.

·     Sprinkle in some garam masala powder and kasuri methi, and the gravy is ready.

·     Now pour the gravy on the koftas and serve it with little bit of fresh cream on top as garnish.

  • 1 kg boiled Jackfruit (Echor)
  • 4 boiled Potato
  • 1 tsp Coriander Powder
  • 1 tsp Cumin leaves
  • 4 chopped Green chilly
  • 1 tsp Black pepper powder
  • chopped - handful Cashew nuts
  • 1 tsp Red chilli powder
  • chopped - handful Raisin
  • 1 tbsp(optional) Mawa
  • 1-2 tbsp Chatu
  • 1 tbsp Sugar
  • as per your taste Salt
  • 2 Bay leaves
  • 1 inch Cinnamon
  • 5-6 Green cardamom
  • 5-6 Cloves
  • 2 medium sized , finely chopped Onion
  • 1.5 tsp Garlic paste
  • 1.5 tsp Ginger paste
  • 1.5 tsp Green chilly paste
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • roasted and crushed to powder- 1.5 tsp Kasuri methi
  • 1 tbsp Cashew nut and poppy seed paste
  • 1 tsp Garam masala
  • 2 tbsp Fresh cream
