Oatmeal Banana Loaf

It's my oatmeal banana loaf! It's sugar free and has a very mild sweet taste to it, and it tastes as good as a good banana loaf! It's healthy and quite filling, so makes a pretty good suhoor! 



1.    Boil the dates in the milk and let them sit for 15 mins

2.    Fish out the dates and roughly chop them along with nuts/dried fruits

3.    Add lemon juice, vanilla and honey to the milk and set aside

4.    Mash the bananas and add in eggs one at a time whisking thoroughly after each addition

5.    If using sugar, add it here and whisk till all combined

6.    Add in your oil and milk mixture and whisk it all together

7.    Fold in the dry ingredients 1/3 at a time and with the last batch add in your nuts, dried fruit and dates

8.    Mix till all combined and dont overmix

9.    Pour in your prepared pan and bake in preheated oven@180c for 45-50 mins or till golden at the top

10.You can have it as it is or top it with some caramel sauce! Either way it's a treat! 


The riper the lesser need to add sugar

  • 5 overly ripe Banana
  • 3 Eggs
  • 1 cup Dates
  • 1/2 cup Milk
  • 1/2 tsp Lemon Juice
  • 1 tbsp Vanilla Extract
  • 2 tbsp Honey
  • 3/4 cup , flavourless Oil
  • 1 cup Oatmeal Flour
  • 1 cup All purpose flour (maida)
  • 1/2 cup Whole wheat flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 cup Dried nuts / fruit
