Isn't she a beauty for this weekend I have this super citrusy lemon cake! With an equally incredible lemon drizzle and glaze!! 



1.   Cream together butter and sugar till light and fluffy

2.   Are in eggs one by one and give it a good whisk till nicely combined

3.   Add in the vanilla whisk till combined

4.   Fold in the dry ingredients and do not over mix the batter.

5.   Pour in the prepared tin and bake in a preheated oven for 25-30 mins @ 170 c till a toothpick comes out clean

6.   Once cooked poke the cake with a scewer.

7.   Pour the drizzle ( sugar dissolved in juice) over the cake and let it soak up at least for 7-10 mins.

8.   For the glaze add in a tbsp of lemon juice to a cup of icing sugar and stir till it comes to a pouring consistency...

9.   Glaze the cake and garnish it with some lemon wedges and mint leaves, enjoy!


At point 6à Do not go all the way through. You can do this in the pan itself or after demoulding the cake.

  • 1 3/4 cups All purpose flour
  • 1 Lemon Zest
  • 1 tsp Baking powder
  • 1/2 cup Butter
  • 1 cup Sugar
  • 4 Eggs
  • 1 tbsp Vanilla essene
  • 1 cup, FOR DRIZZLE Icing sugar
  • Juice from 1 1/2 Lemons
  • 1 cup, FOR GLAZE Icing sugar
  • 1 tbsp Lemon juice
  • for garnishing Mint Leaves
