Make this beautiful No Bake Mango Pudding Cake! It's topped with crushed meringue cookies which is optional, you can top it off with any crushed biscuits purely to give it a nice crunchy texture! 

Make this beautiful No Bake Mango Pudding Cake! It's topped with crushed meringue cookies which is optional, you can top it off with any crushed biscuits purely to give it a nice crunchy texture! 

Steps:-


Add cold water to the gelatin, stir and let sit to bloom

Meanwhile in a saucepan take all the ingredients except for mango puree and mix briefly before turning on the the flame

Once mixed turn on the stove and cook the mixture on low to medium heat , stirring constantly until it starts to bubble up and thicken

Once it has thickened, take it off the heat and add mango puree

Mix to combine

Add bloomed gelatin to the hot pudding mix and mix till it’s dissolved

Pour the pudding in an 8” round sprinfoam pan and refrigerate overnight or 8 hours

Once set take the crushed cookies/biscuits and press them down gently on the top of the pudding

Run a knife around the edges of the pan and release it on a cake a cake stand.

Garnish with more mangoes and serve!

  • 2tbsp chilled Water
  • 4, yolks Eggs
  • ½ cup Sugar
  • ¼ cup Cornstarch
  • 1 pinch Salt
  • 2 cups Whole milk
  • 2 tbsp Unsalted butter
  • 1 tsp Vanilla extract
  • 1 cup Mango puree
  • 10 crushed for the top Meringue Cookies
  • pieces for garnish Mango
