Description:-


Soft eggless vanilla cake base, a layer of juicy cherries and topped with a crisp crumb! This Eggless Cherry Crumb cake is easy and delicious, the best part is that even if you don’t want to use cherries, you can use this same recipe for any other fruit and get the same amazing result every single time. From pineapple to apples to strawberries to peaches, the basic recipe will remain the same! so here is how to make it!

Steps:-


CHERRY FILLING

1.    mix all the ingredients in a bowl, till the cherries are fully coated, set aside

CRUMB TOPPING

1.    in a bowl, mix sugar with flour and salt

2.   using your fingers work the butter into the flour mixture to partially incorporate

3.   it will now be an even mixture, just make sure it looks like grainy wet sand

4.   set aside

CAKE

1.    mix together curd and sugar till sugar is almost dissolved

2.   add oil, vanilla extract and lime juice and mix to combine

3.   in a separate bowl, sift all-purpose flour, salt, baking powder, and soda

4.   add sifted dry ingredients to the curd and sugar mixture, 1/3 at a time

5.   when all the dry ingredients are fully incorporated, check the consistency

6.   if the batter is too thick add milk, if it’s flowy, not too thick not too thin, no need to add milk

7.   pour in a springform pan greased on all sides and lined with parchment paper at the bottom

8.   now pour the cherry filling evenly on the surface of the cake batter

9.   now evenly spread the crumb mixture on the top

10.                 bake in a preheated oven @180C for 35-40 mins, or until a toothpick inserted into the center comes out clean

11.using a knife release the sides of cake and let it come to room temperature before serving! Enjoy!

  • 3/4 cup Curd
  • 1 1/2 cups Sugar
  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1 tsp Vanilla extract
  • 1 Lemon Zest
  • 1/4 cup (if necessary) Milk
  • 3/4 cup Vegetable Oil
  • 1 1/2 cups pitted, FOR CHERRY FILLING Cherries
  • 1 1/2 tbsp, FOR CHERRY FILLING Cornflour
  • 2 tbsp, FOR CHERRY FILLING Sugar
  • 1 tsp , FOR CHERRY FILLING Lemon juice
  • 3/4 cups, FOR CRUMB All-purpose flour
  • 1/4 cup Sugar
  • 4 tbsp chilled cubed into 1′ pieces Unsalted butter
  • a pinch Salt
