This spicy and delicious stuffed eggplant dish is a great substitute if you want to go vegetarian for a day. Here's how:


1. Heat oil and cook onions garlic, ginger and shredded coconut till golden brown. Grind this to a smooth paste.

2. Heat oil, splutter cumin seeds. Add red chili powder, turmeric powder, coriander powder, coriander leaves and the paste from Step 1.

3. Add tomato puree and salt. Simmer the flame and let this cook till the water evaporates and the whole mixture comes together.

4. Make deep cuts in the eggplants and stuff the masala from Step 3 in them.

5. Add water to the pan. Once the water starts boiling, add the stuffed eggplants to it.

6. Lower the flame, close the lid and let the eggplants cook. Serve hot with onions and lemon!

  • 4 medium Egg plant (Baingan)
  • 2 medium Onion
  • 1 tsp finely chopped Ginger
  • 1 tbsp, crushed Garlic
  • 2-3 Medium pureed Tomato
  • 1 tbsp Coriander powder
  • 1 tsp Cumin Seeds
  • 2 tbsp Oil
  • 1 tbsp Red chilli powder
  • 1 tbsp Turmeric powder
  • 2 tbsp Coriander leaves
  • to taste Salt
  • 1/2 cup Water
  • 1 tbsp Lemon juice
  • 1 tbsp, shredded Coconut
